Made completely from scratch at Casa Scollo, our Focaccia Mediterranea takes inspiration from the classic focaccia of Tuscany and gives it a distinctly Sicilian character. Light, airy, and beautifully golden, the focaccia is generously finished with briny olives, sweet onions, and our special house-made confit tomatoes.
Our confit tomatoes are slowly cooked at a gentle temperature with extra virgin olive oil and aromatic herbs, allowing the tomatoes to become exceptionally tender, sweet, and intensely flavorful while concentrating their natural richness. Combined with the olives and onions, they give this focaccia a beautiful balance of savory, sweet, and Mediterranean flavors.
