A true Sunday tradition in my family.
This is the roasted chicken that has been on our Sunday table for generations. My Nonna learned to make it from her mother, my mother learned it from my Nonna, and I learned it from my mother. Today, my son cooks it the same way.
A generous half chicken, seasoned simply with salt, black pepper, herbs, and extra-virgin olive oil, then roasted until beautifully browned and tender.
It is served with our rustic roasted potatoes, prepared with potatoes, tomatoes, onions, carrots, salt, black pepper, herbs, and extra-virgin olive oil.
